Method

Read the whole thing once before you start. Nothing here is difficult, but the timing is unforgiving at the end.

  1. Preheat and prepare the pan

    Preheat the oven to 425°F. Line a large, heavy-duty rimmed baking sheet with parchment paper or aluminum foil for easier cleanup, though roasting directly on the metal yields the best browning.

  2. Season the cauliflower

    Place the cauliflower florets on the prepared baking sheet. Drizzle with 2 tablespoons of the olive oil, half of the minced garlic, half of the oregano, half of the thyme, and half of the salt and pepper. Toss well to coat, then spread into an even layer.

  3. Season the chicken

    In a medium bowl, toss the chicken thighs with the remaining 1 tablespoon of olive oil, the remaining garlic, oregano, thyme, salt, and pepper. Ensure the chicken is evenly coated, rubbing the spices into the skin.

  4. Arrange and roast

    Nestle the chicken thighs among the cauliflower on the baking sheet, skin-side up. Roast for 40 to 45 minutes, or until the chicken skin is deeply browned and crisp, and the meat registers 165°F on an instant-read thermometer.

  5. Rest and serve

    Remove the pan from the oven and let the chicken rest for 5 minutes before serving. This allows the juices to redistribute. Serve hot, with lemon wedges on the side for squeezing over the chicken and vegetables.
